Bacon Onion Jam

This bacon onion jam was a key part of Dan's winning appetizer at his 2021 company holiday party. This sweet and savory treat is a great addition to recipes such as Dan's Mac and Cheese Balls or a hearty cheeseburger, and even by itself as a dip for tortilla chips, pretzels, or crostini. This is a sure hit at any gathering and so easy to make!

Ingredients
  

  • 1 lb Bacon Thick Cut
  • 2 Large Vidalia Onions Any sweet onion will do, I prefer Vidalia
  • ½ cup Light Brown Sugar
  • ½ cup Water
  • cup Nescafe Instant Coffee
  • 1 tbsp Balsamic Vinegar
  • ½ tbsp Garlic Powder
  • ½ tbsp Ground White Pepper

Instructions
 

  • Cut the bacon into half-inch slices.
  • Quarter the onions then cut them into thick slices.
  • Add the bacon to a large frying pan over medium-high heat. Cook for 10-15 minutes until the bacon is lightly cooked and chewy. Be sure to stir often in order to avoid overcooking. Feel free to use your spatula to cut the bacon into smaller pieces if they're large. Once ready to remove from the pan, use a slotted spoon to allow the fat to remain in the pan.
  • Reserve 1 to 2 tablespoons of the bacon fat and add the sliced onions to the pan. Cook over medium-high heat for 10 minutes then reduce the heat to low.
  • Add the brown sugar and stir the onions. Cook the onions for 20-25 minutes until the onions are caramelized.
  • Once caramelized, add the bacon, Nescafe coffee, water and balsamic. Increase the heat to medium and cook for another 30 minutes, stirring occasionally.
  • Before removing from the heat, add the garlic powder and white pepper to taste and stir.
  • Once the mixture is thick and jam-like after 30 minutes or so, remove from the heat. And serve immediately or refrigerate until ready to serve.

Notes

The jam can be refrigerated for up to a week. When using, be sure to serve the bacon jam at room temperature.
